Having been stationed with the Navy in San Diego for four years, I acquired a hankerin’ for great Mexican food. I was so excited to visit our new neighbors at Country Burrito Fresh Mex. I brought ‘mi padre’ with me and we were greeted with corn chips and fresh salsa prepared by local Salsa King, Tivo Correa, who has made an art of roasting tomatoes and jalapenos for this restaurant staple.

Country Burrito Fresh Mex’s grand opening was on August 3rd and they have set up shop in the space next door to the Bread Box at 10636 Hardin Valley Rd.

After whetting our appetites with chips and Tivo’s salsa, we were ready to dive into lunch. My father ordered the Burrito California (steak, rice, lettuce, tomatoes, sour cream, guacamole, and jalapenos smothered with queso and salsa verde). I went with the Arroz con Pollo (chicken breast cooked with bell peppers, onions, carrots, broccoli, zucchini, mushrooms and tomatoes served over rice.)

In between mouthfuls, co-owner Israel Canales, stopped by to check in on us and answer a few questions. I always want to know what the man in charge eats when it’s his time to dine. Israel said his favorite dishes are the cornmeal sopes and carnitas (pork) tacos. I also asked him what the best, yet-to-be-discovered menu item was. Israel said that that honor belongs to the Fajita Molcajete. Are you ready for this? The Fajita Molcajete is grilled chicken, steak, pork, chorizo (Mexican sausage) and Nopal (cactus) topped with mozzarella cheese! If that isn’t enough food, the platter comes with your choice of two sides and corn or flour tortillas. Better wear the loose pants to that meal!

Israel was also excited about being open for breakfast (runs from 8am-11am). The morning menu ranges from country breakfast burritos to pancakes, french toast, waffles and omelettes.

They have a speed to go menu for those on the run and traditional dining with plenty of seating for those with time. I can’t wait to go back because they fully earned the “Empty Plate Approval!”
